Robin Miller's Slow Cooker Chipotle Lime Chicken

Hi all!

I shared this with my Facebook family and with my "tweeps" on Twitter today. So many people from both places have been asking for this recipe!! I decided to send it to you via this blog. It's SO delicious and it's enough to share or freeze for later! Hope you enjoy making it too!!

Thanks to the Food Network website for providing this recipe!! It's been modified to add extra "flava"....


Ingredients:
1 cup sliced onion
1 cup chopped celery
1 cup chopped carrots
4 pounds skinless chicken thighs (I used half thighs and half breasts)
Sea salt
Freshly ground black pepper
1 can tomato sauce (15 ounces)
1/3 cup lime juice
1 tablespoon minced chipotle chilies in adobo, with 1 teaspoon sauce from can
2 cloves garlic, minced
1 avocado, diced
1/4 cup chopped fresh cilantro leaves
Lime wedges, for garnish

Instructions:
Arrange onion, celery, and carrots in bottom of slow cooker. Season chicken thighs with sea salt and pepper and arrange over vegetables. In a medium bowl, whisk together tomato sauce, lime juice, chipotle chilies with sauce, and garlic. Pour mixture over chicken. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Serve on top of brown rice, topped with avocado and cilantro. Use lime wedges for garnish and to squeeze over chicken for extra lime taste.

Serves 8.


Any veggie side would be GREAT with this - corn on the cob, green beans, green peas, squash, broccoli, asparagus, even a baked apple would make this meal AMAZING!!!
